Moroccan Kefta

For the Moroccan meal, we prepared an appetizer called Kefta. You can serve the Kefta with a simple yogurt sauce or with chopped olives and toasted bread. The meatballs can also be placed on skewers and grilled instead of baked.



Moroccan Kefta

Makes 8 meatballs

  • 1/2 yellow onion

  • 1/2 cup fresh parsley

  • 1/2 cup fresh cilantro

  • 1 pound ground beef

  • 1 tablespoon paprika

  • 1 teaspoon cumin

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • 1/2 teaspoon cayenne

  • Oil for drizzling

  • toasted baguette slices and chopped olives for serving


Preheat oven to 325ºF. Line a baking sheet with parchment or foil.


Place the onions, parsley, and cilantro in a food processor. Pulse to finely chop the onions. In a bowl, combine the onion mixture with the ground beef, paprika, cumin, salt, pepper, and cayenne. Mix until combined.


Form into 8 oval meatballs. Place on the baking sheet. Drizzle with oil.


Bake for 20-25 minutes or until the meatballs reach an internal temperature of 155ºF.


Serve with toasted baguettes slices and chopped olives.
