Looking for another way to use winter squash? Cook them up as fritters. Any winter squash will work, as long as you can peel it easily. We used butternut squash for the dinner.
Winter Squash Fritters
1 butternut squash, peeled and shredded
1/2 to 1 cup flour (GF flour can be used), depending on the squash and how much moisture it contains
1/3 cup fresh mint, finely chopped
2-3 cloves garlic, minced
1 teaspoon salt
1 teaspoon pepper
oil for pan frying
Squeeze out excess water from the squash.
In a large bowl, combine the shredded squash, flour, mint, garlic, salt and pepper. Add additional flour it needs more binding (should hold together when squeezed into a ball).
Pour enough oil into a saute pan to cover the bottom. Heat the oil over medium heat. For the squash into 2-inch patties. Fry on each side until golden brown. Add more oil as necessary.
Remove squash from the oil and drain on paper towels.
Serve warm.
