Spice Mixes: Morocco, Lebanon, Tunisia, Greece

Spices mark Mediterranean cuisine, especially along Northern Africa. Here are spice mixes from Morocco, Tunisia, Greece, and Lebanon.


Morocco: Ras el Hanout

  • 2 teaspoons ground ginger

  • 2 teaspoons ground cardamom

  • 1 teaspoon ground cinnamon

  • 1 teaspoon ground allspice

  • 1 teaspoon ground coriander

  • 1 teaspoon ground nutmeg

  • 1 teaspoon ground turmeric

  • 1/2 teaspoon ground black pepper

  • 1/2 teaspoon ground cayenne pepper

  • 1/4 teaspoon ground cloves

Mix together and store in an airtight container.


For more prominent spice flavor, use whole spices and grind them with a coffee grinder.


Tunisian Spice Blend


3 tablespoons ground corinander

1 1/2 tablespoons ground cumin

1 tablespoon caraway seeds

2 1/2 teaspoons crushed red pepper flakes (or aleppo pepper)


Mix together and store in an airtight container. If you don't want who caraway, blend in a coffee grinder.


Lebanon: Baharat Seasoning


· 1 tablespoon ground black pepper

· 2 teaspoons ground nutmeg

· 2 teaspoons paprika

· 1 teaspoon ground coriander

· 1 teaspoon ground cinnamon

· 1 teaspoon ground cloves

· 1 teaspoon ground cumin

· 1 teaspoon kosher salt

· 1/4 teaspoon ground cardamom


Mix together and store in an airtight container.


Greek Spice Blend


· 2 teaspoons salt

· 2 teaspoons garlic powder

· 2 teaspoons Greek oregano

· 2 teaspoons dried basil

· 1 teaspoon dried onion

· 1 teaspoon ground black pepper

· 1 teaspoon dried parsley

· 1 teaspoon dried dill weed

· 1 teaspoon dried marjoram

· 1/2 teaspoon ground thyme

· 1/4 teaspoon ground cinnamon

· 1/4 teaspoon ground nutmeg


Mix together and store in an airtight container.
