This recipe highlights the mild flavor of paprika. Serve with pita, fresh veggies, or with kebabs.
Hummus
1 15-ounce can chickpeas, drained and rinsed
1/3 cup tahini
3-4 tablespoons fresh lemon juice
2 cloves garlic
1 tablespoon ground paprika
1/4 cup olive oil
salt and pepper, to taste
Combine the chickpeas, tahini, lemon juice, garlic, and paprika in a food processor. Pulse until finely chopped. With the motor running, slowly pour in the oil. Puree until semi-smooth. Season to taste with salt and pepper.
Refrigerate until ready to use.
