Dalmatian Silverbeet

Silverbeet, aka, Swiss chard is mixed with potatoes for a flavorful side dish.
Dalmatian Silverbeet
3-4 cups vegetable stock (season with salt and pepper if unsalted)
3 medium Yukon gold potatoes, diced
1 bunch Swiss chard (silverbeet), destemmed and roughly chopped
4 cloves garlic, minced
1/2 cup olive oil
salt and pepper, to taste
Bring the stock to a boil. Add the potatoes. Cook until the potatoes are tender, about 15 minutes. Add the chard, garlic, and oil. Season with salt and pepper. Cook for 10-15 minutes. Drain off excess liquid. Adjust seasonings to taste. Serve warm as a side dish.
