Carrot and Cucumber Ribbons

Fresh flavors mark this salad inspired by Moroccan cuisine.


Carrot and Cucumber Ribbons


4 large carrots, peeled into long strips (like ribbons)

2-3 cucumbers, peeled into long strips (like ribbons)

2 oranges, peeled and segmented

1/2 - 1 cup kalamata olives, chopped

1/2 cup pistachios, chopped

1/3 cup olive oil

1/3 cup fresh lemon juice

salt and pepper, to taste

1 teaspoon dried thyme


In a medium bowl, combine the carrot and cucumber ribbons, segmented oranges, olives, and pistachios. Set aside.


In a small bowl, whisk together the olive oil and lemon juice, Add salt and pepper to taste. Add the dried thyme.


Drizzle the vinaigrette over the salad ingredients. Toss to mix well. Serve.
