Sun-dried Tomato and Green Apple Salad

Crisp and refreshing, this salad would make a great appetizer or side dish alongside chicken or fish.


Sun-dried Tomato and Green Apple Salad

  • 5 sun-dried tomatoes

  • 2 green apples (such as Granny Smith), diced

  • 1 red bell pepper, diced

  • 1 ounce fresh mint, chopped

  • 1/4 cup fresh parsley, chopped

  • 8 ounces feta cheese crumbles

  • 8 ounces olive oil

  • 2 ounces balsamic vinegar

  • salt and pepper, to taste

Soak the sun-dried tomatoes in warm tap water for 10-15 minutes. Drain and roughly chop.


In a bowl, toss together the tomatoes, apples, red pepper, mint, parsley, and feta cheese. Set aside.


In a small bowl, whisk together the olive oil and balsamic vinegar. Season with salt and pepper.


Drizzle the oil mixture over the salad, tossing well to coat. Serve.
