Lima Bean Salad

Simple and straightforward, this salad would go well with most any grilled food - fish, chicken, or beef. Substitute cannelini beans if you can't find lima beans.
Lima Bean Salad
1/4 cup fresh lemon juice
1/4 cup olive oil
1 clove garlic, minced
salt and pepper, to taste
1-2 heads leaf lettuce, chopped
1 15-ounce can lima beans, drained and rinsed
1/2 cup fresh parsley, chopped
1 bunch scallions, chopped
In a bowl, whisk together the lemon juice, oil, and garlic. Season to taste with salt and pepper. Set aside.
In a large bowl, toss together the lettuce, beans, parsley, and scallions. Drizzle with the lemon mixture. Toss to coat well. Serve immediately.
